    Here's a tasty pasta dish made from the classic pasta of Abruzzo and a classic sauce - ragù di agnello. We enjoyed the version pictured in a trattoria in the main square of Lama dei Peligni.   ingredients 500 gr. Maccheroni pasta, 1kg lamb, 250 gr. mature tomatoes, 3 spoonfuls of extra virgin olive oil, half a cup dry white wine, 2 garlic cloves, laurel leaf, your favorite pecorino cheese, meat stock or brodo, salt and pepper to taste

Spaghetti with clams recipe

This recipe for spaghetti pasta with clams comes from the Province of Chieti in Abruzzo. It is simple to make and very tasty. We can vouch for this having enjoyed the dish by the beach in Vasto at Bagni Vittoria. The pasta was by Giuseppe Cocco, perhaps the best of all the dried pastas in Italy. ingredients 400g spaghetti, 1 kg clams, 2 cloves garlic, tin of tomatoes, 1 sprig of parsley, 1 red pepper, handful of basil leaves, olive oil.

Maccheroni alla Chitarra

This recipe comes from the Province of Teramo in Abruzzo and the "chitarra" (guitar string-shaped pasta), is made with an 'instrument' that is easy to find in any market in Abruzzo. ingredients 700 gr. flour, 6 eggs (1 egg per person), 200 gr. lamb, 200 gr. lean pork, 3 large cartons peeled tomatoes (or 2 one-liter bottles), 50 gr. butter, 1 cup oil, 1 small onion, 1 carrot, salt, plenty of Parmesan cheese.

Scrippelle 'mbusse, crepes from Abruzzo

This recipe for Abruzzese crêpes in broth comes from the Province of Teramo and serves 6. ingredients 10 eggs for making the "scrippelle", fried breaded artichoke slices, 3 pieces of scamorza cheese, 3 hard boiled eggs sliced into small pieces, butter, about 80 gr. of grated Parmesan cheese, salt and as much milk as you like.
